Omnipollos Hypnopompa: Review by @Robyn_Seto
With autumn officially upon us, I decided to review an imperial stout to celebrate the beginning of this crisp season. Another fun beer from our friends at Omnipollo: Hypnopompa.
Stouts are essentially darker, stronger porters. All stouts are porters, but not all porters are stouts. The “imperial” in the imperial stout style refers to how these beers are generally higher in ABV than the average stout; ranging from about 9% to 12% ABV…although I have seen higher.
Hypnopompa is an imperial stout brewed with marshmallows and Tahitian vanilla beans, rolling in at 11% ABV. From the start, this has very rich and cohesive flavors with dark chocolate heavily at the forefront. The vanilla beans add a deep and natural sweetness that is not cloying. The marshmallows add a slightly fluffy and smooth mouthfeel. It’s very roasty, has no detectable hoppiness, and finishes fairly clean. As the beer warms, the dark chocolate nature of the beer begins to sweeten and take on cola-like flavors. I only really noticed a booziness to the taste when the beer was warmer, especially on the nose. Overall, it hides the alcohol well.
